I don't really have a recipe for these, but they are awesome!! (If you like the potatoes that come with Souvlaki at Pizza Haven, you've got to try making these... they're better!)
Quarter some potatoes & put them in a baking dish (in a single layer). Pour a couple of tablespoons of lemon juice over the potatoes. Drizzle with olive oil (a little on each potato). Sprinkle salt, pepper, and greek seasoning over top (dried oregano will work too). Carefully pour enough chicken broth (or water) into the bottom of the pan, so that there is about half an inch of liquid at the bottom of the pan. Don't pour the broth directly over the potatoes, or you'll wash off all the seasoning goodness :-)
Put the potatoes in your oven at about 375 for about an hour or so (depending on how brown you like them). Every once in awhile, go give them a shake, or move them around (you don't want them to stick). If all the liquid has cooked off, pour some more in.
