So, I remember seeing a recipe for this somewhere, but I had no idea where.... so I made up my own version for supper today. It was really good!
Butterfly chicken breasts & stuff with chopped Kalamata olives, feta cheese & roasted red peppers (from a jar works fine). Use toothpicks to close the edges, put in a pan, and pour Sundried Tomato salad dressing over top. Let marinade for a few hours & grill.
A good side dish to go with this:
Slice potatoes, onions, red peppers, mushrooms & carrots. Toss with Sundried Tomato salad dressing. Put in a foil plate & bbq.
