Salsa

I'd love to make some salsa as I have lots of peppers ready and my tomatoes are slowly ripening.  I wish I could go somewhere and taste test a bunch of salsa and pick the best recipe.  I'm not one for a really chunky salsa, and I don't like it hot either.  A mild one would be nice...So, does anyone have a good recipe?

Re: Salsa

I have a few salsa recipes that I mix and match. Here is my favorite one:

2 large onions

14 cups tomatoes

8 green or red sweet peppers

4 cloves garlic

1/2 cup sugar or add more to taste

3 tablespoons salt

1/2 tsp. oregeno

1 tsp. garlic powder

1.2 tsp cumin

1/2 cup vinigar

3 bay leaves

1/2 can mexired peppers- I substitute fresh hot peppers but you could leave this out if you don't want it too hot

2-3 cans tomatoe paste

Cook for one hour. Mix 5 tablespoons corn starch with a little bit of water until smooth. Add to salsa mixture and cook 5 more minutes. Pour into jars.
